Most Moraitis tomato varieties with the expection of our field grown Heirlooms and some lines in Western Australia are vine-ripened and grown using hydroponic practices in Victoria, Queensland, Western Australia and New South Wales. Varieties are harvested daily and sent to market 52 weeks of the year.
Vine ripe tomatoes are picked at a slightly riper stage than traditional tomatoes and finish ripening naturally without ethylene treatments.
The longer the tomato is left on the vine, the sweeter it gets. Another great fact about vine--ripened tomatoes is that they have a longer lasting quality after harvest.
Whatever you do - don't store your tomatoes in the fridge! Keep them at room temperature away from direct sunlight for optimum flavour and eating quality.

Vine-ripened tomatoes are naturally high in Lycopene plus they are a good source of vitamin C, folate and dietary fibre. They are also very low in sodium and high in Vitamin A.
